One thing we did was to run a sms package about an hour before the install that just updates a txt file on the users C drive. Only have this run if there is a user logged into the machine and after it finishes have SMS log the user off. Now you know Outlook is not open and you can have your SEP upgrade run only if no user is logged into the system. Works great for us and we use the process anytime we are doing a install that we know haveing anything open can cause a problem. It had me troubled for a while trying to pinpoint why it was happening on some machines and not others.
